Pizza, straight from the heart(h)!

Pizza never fails to excite young and old alike! Be sure to make a larger-than-expected batch of dough, as this one is sure to be a crowd-pleaser!



Makes 2 12" pies!

Dough

Ingredients

  • 1.5 cups warm water

  • 2 tbsp olive oil

  • 2 tsp salt

  • 4.25 cup whole wheat flour (we used chapati flour)

  • 2 tsp sugar

  • 2 tsp yeast

Bread machine directions

  1. Set on the "pizza dough" feature and add the ingredients in the order listed (this is very important!)

  2. When the dough is complete, remove and place on a floured board large enough to roll a 12" pizza crust or make multiple smaller rounds.

Hand-kneading directions

  1. Combine flour, sugar, yeast, and salt in a bowl. Shift them together.

  2. Add water and oil, then mix until the dough begins to form -- add water or flour if the dough is too dry or sticky.

  3. Grease a large bowl with 2 tsp olive oil and add the dough, making sure the bowl size is double the dough size. Plastic-wrap the bowl and place it in a warm location (ideally: turn the oven on for a minute and turn off, then place the bowl inside).

  4. The dough will rise to double its size in an hour!

Pizza dough can be made ahead of time and stored in plastic wrap in the fridge for 2-3 days. Now, for the exciting part!

Topping the Pizza

Ingredients

  • 1 large red bell pepper

  • 1 large orange or yellow bell pepper

  • 1 large green bell pepper

  • 1 large red onion

  • 2 medium tomatoes

  • 10 basil leaves

  • 1 green chili

  • 8 cloves of garlic

  • 16 oz pizza sauce of your choice

  • 8 oz shredded pepper jack cheese (or your favorite!)

  • (optional) pineapple chunks

Directions

  1. Make ~2inch long slices of the bell peppers and onion. Slice the tomatoes. Finely chop the basil. Mince the garlic and chili.

  2. (Optional) Grill the vegetables on the broil setting in the oven for 10 minutes.

  3. Preheat the oven at 400 degrees.

  4. Roll out half of the pizza dough on the floured surface using a rolling pin, until it is even and about 1/2 inch thick. Transfer it to the pizza pan and bake it for 10 minutes.

  5. Remove the pan from the oven and flip the pizza crust.

  6. Top the crust with pizza sauce and add a sprinkle of cheese (don't worry, you will add more later!)

  7. Add the basil, garlic, chili, and then the remaining vegetables. Top it with more cheese.

  8. Bake the pizza for 20 minutes on 400 degrees. Remove, slide the crust onto a cutting board or pizza stone, slice, and enjoy!
