Kathi roll is believed to have been started by a popular restaurant "Nizam" in Kolkata, India in 1932. Traditionally, it's a Kathi (Bengali for stick) kabab wrapped in a paratha (Indian flatbread). Enjoy this vegetarian rendition with zesty bell peppers, onions, and garam masala-spiced paneer!
In this version, making bhurji (shreds) of all the vegetables and paneer makes it easy to eat without being messy. The taste never fails to amaze young and old alike!
Makes 6 servings
Paneer Bhurji
Ingredients
1 medium red onion
1 red bell pepper
1 orange bell pepper
1 yellow bell pepper
1 green bell pepper
1 medium potato or sweet potato
2 medium-size tomatoes
2 tbsp roasted peanuts
2 lb paneer
1/2 cup chopped cilantro
5 cloves garlic
2 tsp grated ginger
2 tbsp garam masala
2 tbsp chaat masala (or pink Himalayan salt and dried mango powder)
1 tsp cumin seeds
1 tbsp red chili powder
2 tbsp oil or butter
salt to taste
Directions
Finely chop ginger and garlic. Chop onions to about 1/2 inch pieces.
Heat butter or oil in a pan. Add cumin seeds and let sizzle for a minute. Add the chopped ginger, garlic, and onion mixture.
Cut the peppers and the potato. Add to the pan and cook on medium heat for two minutes. Finely chop tomatoes and add to the pan. Cook on a medium flame for 5 minutes.
Shred the paneer and add it to the pan, then stir briefly.
Add garam masala and red chili powder, then let it cook for 5 minutes.
Remove the pan from heat. Add chaat masala and cilantro.
Sweet and spicy cilantro chutney
Ingredients
1 bunch cilantro
4 dates
2 tbsp tamarind pulp
1/4th cup peanuts
2 lemon
1 small green chili
2 tbsp cumin-coriander powder
salt
Directions
In a blender jar (we like the Blendtec twister jar) add all the ingredients, with the peanuts on top.
Blend on batter/sauce setting until the cycle is done, mixing occasionally if needed.
Putting it all together!
Warm your favorite flatbread, paratha, naan. Spread the bhurji on half the side. Top it with the cilantro chutney. Roll and serve warm immediately.
Toast your favorite sliced bread. Spread the cilantro chutney on both sides. Then spread the bhurji on one, smash them together, and enjoy!
