This blend of classic cheesecake and mango, the queen of all fruits, is the perfect treat for any celebration. Made with only 8 ingredients and no-bake, easy assembly, it's a low-effort and high-reward dessert that's sure to top your recipe list!
Makes 6 servings (mini mason jars)
Ingredients
1 1/2 tbsp melted butter
1 tsp vanilla extract
1/4 cup caster sugar
1 cup crushed graham crackers (or 1/2 cup honey grahams and 1/2 cup crushed cookies of your choice)
8 oz (227g) cream cheese
1 cup mango puree (we love Deep Kesar Pulp!)
100g heavy whipping cream
(to top) roasted pecans, coffee powder, strawberries, mangos, or other fruits of your choice
Directions
In a bowl, add heavy whipping cream and whisk on medium-high until it reaches soft peaks. You can use a stand mixer or a hand mixer.
Add mango puree, cream cheese, caster sugar, and vanilla extract. Mix for a minute or two until homogenous.
In a food processor, pulse graham crackers and cookies until they reach breadcrumb texture. Add butter. Gently mix and set aside.
In a set of 6 small, transparent glass jars or bowls, divide the graham cracker mixture into 6 parts. Use the back of a spoon or spatula (or some other flat object) to flatten the mixture.
Pipe the cheesecake mixture into each jar.
Cover and refrigerate until ready to serve. Top with a sprinkle of coffee powder, chopped mangos or other fruits, and pecans. Enjoy!
