California Sunrise Waffles and Pancakes

What better way to start your day than with this sweet cinnamon-flavored waffle topped with your favorite fruits and a cup of tea or coffee!


We love this recipe because it's easy to make and is full of nut proteins and whole grains. If you're more of a pancake person, blend 2.5 cups (as opposed to 2) of milk and two bananas while making the batter for an equally tasty breakfast!


Makes 4 servings

Ingredients

  • 1 cup whole wheat flour, bulgar wheat, or Bhakhari flour (this is a coarsely-ground version of wheat flour available at most Indian stores and makes the batter fluff up without the need of adding baking poweder or any other rising agent)

  • 1/2 cup ground nuts (we like almonds, walnuts, and pecans!)

  • (optional) 10 raisins

  • 1 tbsp honey or maple syrup

  • 2 cups warm milk (if you want to keep this vegan, you can use warm water and add 1 tbsp oil or ghee)

  • 1 tsp cinnamon powder

Directions

  1. In a large mixing bowl, add flour, ground nuts, raisins, and cinnamon powder. Stir the dry ingredients.

  2. Add honey or maple syrup and milk. Mix well and let it sit for 5 minutes.

  3. Warm the waffle maker while the batter sits. When ready, add the batter following the portion instructions as per the waffle maker (we use a Breville Smart Waffle Pro, but any should work!) Close and set the timer for about 6 mins. This whole grain waffle typically takes 3 to 5 mins longer than the buttermilk option, so be patient!

  4. When ready remove the waffle and top it with banana, maple syrup, your favorite berries, mangoes, or pineapples!
