Our take on this traditional Italian hors d'oeuvre with mozarella fresca and roasted garlic!
Juicy, ripe roma tomatoes mixed with basil and garlic create this aromatic and irresistable recipe, perfect for a spring evening!
Makes 8 servings
8 medium roma tomatoes
1 cup (packed to the brim) basil
10 cloves garlic
4 oz mozarella fresca
4 tbsp balsamic vinegar
Salt and pepper to taste
Your favorite baguette
(optional) 2 tbsp olive oil
Roast garlic in oven on the broil setting for 5 minutes. Cool and finely chop.
Finely dice the tomatoes, smaller the better but watch your fingers!
Bunch up and chop basil, setting aside a few leaves for garnishing.
Cut the mozarella fresca into small cubes.
In a large mixing bowl, add all the ingredients, salt and pepper. Drizzle the balsamic vinegar and olive oil.
Mix and refrigerate. Serve atop lightly toasted, sliced baguette and enjoy!
